  • 2 cups cottage cheese Can use low-fat version for fewer calories.
  • 2 cups marinara sauce Choose high-quality sauce for better flavor.
  • 2 cups shredded zucchini Can layer in thin slices for a pasta-like texture.
  • 1 cup spinach, chopped Fresh spinach is preferred.
  • 1 cup mushrooms, sliced Use your choice of mushrooms.
  • 1 cup bell peppers, diced Any color bell pepper works.
  • 1 cup shredded mozzarella cheese Can experiment with other cheeses.
  • 1 cup cooked ground beef or turkey, optional Add for extra protein; can skip for vegetarian.
  • 1 teaspoon Italian seasoning
  • to taste Salt and pepper
  • Olive oil for cooking For sautéing vegetables.

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • In a large skillet, heat some olive oil over medium heat.
  • Add the diced bell peppers and sliced mushrooms. Sauté for about 5 minutes until they soften.
  • Stir in the chopped spinach and shredded zucchini. Cook for another 3 minutes until the spinach wilts.
  • In a mixing bowl, combine the cottage cheese, Italian seasoning, salt, and pepper. Mix until smooth.

Layering and Baking

  • In a baking dish, spread a layer of marinara sauce on the bottom.
  • Add half of the vegetable mixture on top of the sauce.
  • Follow with dollops of cottage cheese mixture, and sprinkle half of the mozzarella cheese.
  • Repeat the layers with the remaining ingredients: marinara sauce, vegetables, cottage cheese, and top with remaining mozzarella.
  • Cover the baking dish with foil and bake for 25 minutes.
  • Remove the foil and bake for an additional 10-15 minutes until the cheese is golden and bubbly.
  • Allow the dish to cool for 5-10 minutes before serving.

Notes

Garnish with fresh herbs like basil or parsley. Store leftovers in an airtight container in the refrigerator for up to three days.
