Preparation

  • Brown the unsalted butter in a skillet over medium heat, stirring constantly. Cook for 5 to 7 minutes until golden brown and nutty.
  • Remove from heat and allow the butter to cool slightly.
  • In a blender or food processor, combine cottage cheese, heavy cream, brown sugar, milk, and vanilla extract. Add the cooled brown butter, scraping in any brown bits from the pan.
  • Blend until the mixture is smooth and creamy, about 1 to 2 minutes.
  • Taste the mixture and adjust sweetness with more brown sugar if desired.
  • Pour the mixture into a freezer-safe container and cover tightly.
  • Freeze for about 4 to 6 hours, or until firm.

Serving

  • Let ice cream sit at room temperature for 5 to 10 minutes before serving for easier scooping.
  • Scoop into bowls or dessert plates. Garnish with melted dark chocolate, toasted nuts, or whipped cream.
  • Layer in parfait glasses with toppings for an even more appealing presentation.
