For the flatbread

  • 1 cup cottage cheese fresh for best results
  • 1 cup all-purpose flour can substitute with whole-wheat for nuttier flavor
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 large egg
  • 1 tablespoon olive oil
  • Optional: herbs (e.g., dill or oregano), garlic powder, or pepper for flavor can customize flavor with these additions

Preparation

  • Gather all your ingredients.
  • In a medium bowl, combine the cottage cheese, flour, baking powder, and salt. Mix until a soft dough forms.
  • In a small bowl, beat the egg and olive oil together. Gradually add this mixture to your dough while stirring.
  • Transfer the dough onto a lightly floured surface and knead gently for about 1 minute until smooth.
  • Divide the dough into equal portions, roll each into a ball, and flatten into disks.

Cooking

  • Preheat a non-stick skillet over medium heat.
  • Add the flatbreads one at a time, cooking for about 2-3 minutes on each side until golden brown.
  • Repeat until all flatbreads are cooked, adding olive oil to the pan as needed to prevent sticking.

Notes

Store cooled flatbreads with parchment paper between them in an airtight container for up to 3 days. For longer storage, freeze them wrapped in plastic wrap for up to 3 months.
