  • 1 cup cottage cheese Use good-quality cottage cheese for better flavor.
  • 1 cup all-purpose flour Can be substituted with almond flour or whole wheat flour for different flavor.
  • 1 large egg
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 1 tablespoon olive oil For mixing and greasing the skillet.
  • Fresh herbs (optional) Such as parsley or chives.
  • Cheese (optional) For additional flavor.

Preparation

  • In a large bowl, combine the cottage cheese, egg, and olive oil. Mix until well combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, and salt.
  • Gradually add the dry ingredients to the cottage cheese mixture, stirring until a soft dough forms. Optionally fold in fresh herbs or additional cheese.

Cooking

  • Preheat a skillet over medium heat and lightly grease it with oil.
  • Divide the dough into equal portions and flatten each into a round shape, about 1/2 inch thick.
  • Place the flattened dough onto the skillet and cook for about 3-4 minutes on each side, or until golden brown and cooked through.
  • Repeat the process for the remaining dough, adding more oil to the skillet as needed.
  • Once cooked, remove the flatbreads from the skillet and keep warm in a towel until ready to serve.

Notes

Try various toppings such as hummus, pesto, or fresh vegetables. The flatbread is perfect for wraps or as a side dish with soups or stews. Store cooled flatbread with parchment paper in an airtight container for up to five days or freeze for up to three months.
