  • 1 cup cottage cheese High-quality for best flavor
  • 4 large eggs Whisked thoroughly for fluffiness
  • 1/2 cup shredded cheese Cheddar, mozzarella, or your choice
  • 1/2 cup diced vegetables Bell peppers, spinach, onions, etc.
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and pepper To taste
  • Cooking spray or oil For greasing muffin tin

Preparation

  • Preheat your oven to 350°F (175°C) and grease a muffin tin with cooking spray or oil.
  • In a mixing bowl, combine the cottage cheese, eggs, and shredded cheese, whisking until well blended.
  • Add the diced vegetables, garlic powder, onion powder, salt, and pepper, mixing until everything is evenly distributed.
  • Pour the mixture into the prepared muffin tin, filling each cup about three-quarters full.

Cooking

  • Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted into the center comes out clean.
  • Remove from the oven and let the bites cool for a few minutes before carefully removing them from the muffin tin.
