  • 1 cup cottage cheese
  • 4 large eggs
  • 1 cup fresh spinach, chopped
  • ½ cup bell peppers, diced
  • ¼ cup green onions, chopped
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • Salt and pepper, to taste
  • Cooking spray or oil for greasing

Preparation

  • Preheat your oven to 350°F (175°C) and prepare a muffin tin by lightly greasing it with cooking spray or oil.
  • In a mixing bowl, combine the cottage cheese, eggs, garlic powder, onion powder, salt, and pepper. Whisk until well blended.
  • Stir in the chopped spinach, bell peppers, and green onions. Mix everything until evenly distributed.
  • Pour the mixture into each muffin cup, filling them about three-quarters full.

Cooking

  • Bake in the preheated oven for approximately 20 to 25 minutes or until the egg bites are set and lightly golden on top.
  • Remove the muffin tin from the oven and let it cool for a few minutes before gently removing the egg bites.

Serving

  • Serve warm or allow them to cool completely if planning to store them.

Notes

Store in an airtight container in the refrigerator for up to four days. For longer storage, freeze individual bites wrapped in plastic wrap for up to three months. Reheat in the microwave or oven before serving.
