  • 1 cup cottage cheese Choose a good quality cottage cheese for best results.
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup chocolate chips (or your favorite add-ins) Feel free to substitute with nuts, dried fruits, or other mix-ins.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine cottage cheese, granulated sugar, brown sugar, softened butter, and vanilla extract. Mix until smooth.
  • In another bowl, whisk together all-purpose flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring gently until just combined.
  • Fold in the chocolate chips or your chosen add-ins.
  • Scoop tablespoon-sized portions of dough onto the prepared baking sheet, spacing them about two inches apart.

Baking

  • Bake in the preheated oven for 10-12 minutes, or until the edges are golden and the centers remain slightly soft.
  • Once baked, allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

For raw dough storage, place in an airtight container and refrigerate for up to one week or freeze for longer storage. Consider adding a pinch of cinnamon or nutmeg for extra flavor. To prevent sticking, chill dough in the refrigerator before scooping.
