  • 1/4 cup cottage cheese
  • 1/4 cup all-purpose flour
  • 2 tablespoons sugar
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon cinnamon
  • 1 tablespoon vegetable oil
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • 1 tablespoon milk

For the glaze

  • 1/2 tablespoon butter, melted
  • 1/4 cup powdered sugar
  • 1/4 teaspoon milk
  • to taste extra cinnamon for sprinkling (optional)

Instructions
 

Preparation

  • In a microwave-safe mug, combine the cottage cheese, flour, sugar, baking powder, and cinnamon. Mix until well combined.
  • Add in the vegetable oil, vanilla extract, egg, and milk. Stir until the mixture is smooth.

Cooking

  • Microwave the mug on high for about 1 minute and 30 seconds, checking for doneness. If it’s still wet in the center, continue to microwave in 15-second intervals until set.

Glazing

  • While the cake is cooking, prepare the glaze. In a small bowl, mix the melted butter, powdered sugar, and milk until smooth and creamy.
  • Once the cake is finished cooking, let it cool for a minute. Drizzle the glaze over the top and sprinkle some extra cinnamon if desired.
