Preparation

  • Place the cottage cheese in a blender or food processor and blend until smooth and creamy, ensuring no lumps remain.
  • Add unsweetened cocoa powder, maple syrup or honey, vanilla extract, and a pinch of salt to the blended cottage cheese. Blend again until well combined and smooth.
  • Gradually add the milk while blending to achieve your desired consistency; blend until light and airy.
  • Taste and adjust sweetness if needed by adding more maple syrup or honey.
  • Spoon the mousse into dessert glasses or bowls and refrigerate for at least one hour to allow it to set and chill.
  • Before serving, stir gently and garnish with your choice of optional toppings.

Notes

For better blending, use room temperature cottage cheese. Avoid freezing the mousse to preserve texture. It can be made in advance and stored for 3 to 5 days in the refrigerator.
