  • ½ cup full-fat cottage cheese, blended smooth Use full-fat for best results.
  • ½ cup unsalted butter, softened Ensure it is softened to room temperature.
  • ½ cup brown sugar, packed
  • ¼ cup white sugar
  • 1 large egg
  • 1 tsp vanilla extract

Dry Ingredients

  • 1 ¾ cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • ½ tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt

Mix-ins

  • ¾ cup chocolate chips Feel free to substitute with dark chocolate or other types.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a blender or food processor, blend the cottage cheese until smooth.
  • In a large mixing bowl, cream together softened butter, brown sugar, and white sugar until light and fluffy (about 2-3 minutes).
  • Add the blended cottage cheese and mix until fully combined.
  • Incorporate the egg and vanilla extract into the mixture and blend well.

Mixing Dry Ingredients

  • In another bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  • Gradually add the dry ingredients into the wet mixture, stirring gently until just combined. Do not over-mix.

Baking

  • Fold in the chocolate chips until evenly distributed.
  • Drop rounded portions of the dough onto the prepared baking sheet, leaving space for spreading.
  • Bake for 10-12 minutes until the edges are lightly golden.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
