  • 2 large eggs
  • 1 cup shredded cheese Cheddar, mozzarella, or your preference.
  • 1/4 cup almond flour Adjust based on desired texture.
  • 1 teaspoon baking powder
  • Salt and pepper To taste.
  • Optional: garlic powder, onion powder, or herbs For added flavor.

Preparation

  • Preheat your waffle iron according to the manufacturer’s instructions.
  • In a mixing bowl, combine the cottage cheese and eggs. Whisk until smooth.
  • Add shredded cheese, almond flour, baking powder, salt, and pepper. Mix thoroughly.
  • Lightly grease the waffle iron with cooking spray or oil.
  • Pour the batter onto the hot waffle iron and spread it evenly.
  • Close the waffle iron and cook for about 3-5 minutes until golden brown and crisp.
  • Carefully remove the chaffles using a fork and let them cool on a wire rack. Repeat with remaining batter.

Notes
