Ingredients
  

Chaffle Batter

  • 1 cup cottage cheese Well-drained for crispiness.
  • 2 large eggs
  • 1 cup shredded cheese (cheddar or mozzarella) Choose based on your preference.
  • 1/2 cup almond flour or coconut flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • to taste herbs or spices for seasoning Optional for added flavor.

Preparation

  • Preheat your waffle maker according to the manufacturer's instructions.
  • In a mixing bowl, combine the cottage cheese, eggs, shredded cheese, almond or coconut flour, baking powder, and salt. Blend until smooth.
  • If desired, add herbs or spices to the batter for extra flavor.

Cooking

  • Lightly spray both sides of the waffle maker with cooking oil.
  • Pour enough batter to cover the waffle maker surface without overflowing.
  • Close the waffle maker and cook for 3 to 5 minutes, or until golden brown and crispy.
  • Carefully remove the chaffle and repeat with the remaining batter.

Serving

  • Serve immediately for the best texture and flavor. Top with fresh fruits, avocado, or sautéed vegetables as desired.

Notes

Allow the chaffles to rest for a minute after cooking for extra crispiness. Store leftovers in an airtight container in the fridge for up to three days, or freeze for up to three months.
