Ingredients
  

Salad Base

  • 1 cup cottage cheese Use high-quality cottage cheese for the best texture.
  • 1 cup canned chickpeas, drained and rinsed Rinse well to remove excess sodium.

Vegetables

  • 1 bell pepper, diced Add any color of bell pepper.
  • 1 cucumber, diced
  • 1 small red onion, finely chopped
  • 1 tomato, diced
  • 1 carrot, grated
  • 1/4 cup fresh parsley, chopped Can substitute with other fresh herbs like dill.

Dressing

  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice Fresh lemon juice is recommended.
  • 1/2 teaspoon garlic powder Can adjust according to taste.
  • to taste Salt and pepper Adjust to preference.

Preparation

  • In a large mixing bowl, combine the cottage cheese and chickpeas, stirring gently to mix.
  • Add the diced bell pepper, cucumber, red onion, tomato, and grated carrot to the bowl.
  • Sprinkle in the fresh parsley, garlic powder, and season with salt and pepper.
  • Drizzle the olive oil and lemon juice over the mixture.
  • Gently toss everything together until well combined.
  • Taste and adjust seasoning as needed.
  • Let the salad sit for about 10 minutes to allow the flavors to meld.
  • Serve immediately or refrigerate for later.
