  • 1 cup cherry tomatoes, halved For sweetness and color.
  • 1 any color bell pepper, diced Choose your favorite color.
  • 1 small red onion, finely chopped For a bit of crunch and bite.
  • 1/4 cup fresh parsley, chopped To enhance flavor.
  • 1/4 cup fresh dill, chopped Adds a fresh taste.

Dressing

  • 2 tablespoons olive oil For healthy fats.
  • 1 tablespoon lemon juice Adds acidity and brightness.

Preparation

  • Gather all your ingredients.
  • Rinse and drain the chickpeas thoroughly.
  • In a large mixing bowl, add the cottage cheese and chickpeas. Stir gently to combine.
  • Add the diced cucumber, halved cherry tomatoes, diced bell pepper, and chopped red onion.
  • Sprinkle the chopped parsley and dill over the mixture.
  • In a separate small bowl, combine olive oil, lemon juice, salt, and pepper. Mix well.
  • Pour the dressing over the salad mixture and toss gently.
  • Taste and adjust the seasoning if needed.
  • Serve immediately or refrigerate for up to 30 minutes.
