Ingredients
  

Vegetables

  • 1 tablespoon olive oil
  • 1/2 cup onion, chopped
  • 2 cloves garlic, minced
  • 1 cup carrots, diced
  • 4 cups broccoli florets

Soups & Broths

  • 4 cups vegetable broth
  • 1 cup heavy cream

Cheese & Seasoning

  • 2 cups shredded cheddar cheese
  • to taste Salt
  • to taste pepper

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and minced garlic; sauté until soft and fragrant, about 2-3 minutes.
  • Add the diced carrots and broccoli florets; cook for a few minutes.
  • Pour the vegetable broth into the pot and bring to a boil.

Cooking

  • Once boiling, reduce the heat to a simmer and cook for about 10 minutes, until the broccoli is tender.
  • Stir in the heavy cream and gradually add the shredded cheddar cheese, stirring until melted.
  • Season with salt and pepper to taste.

Serving

  • Ladle the soup into warm bowls and garnish with additional cheese, fresh broccoli florets, or cracked black pepper if desired.
