Congo bars are a cross between brownies and cookie bars, featuring a delightful blend of chocolate, macadamia nuts, and shredded coconut for a rich, indulgent treat.

Ingredients
  

Base Ingredients

  • 3/4 cup butter, melted and cooled
  • 1 1/2 cups light brown sugar
  • 2 pieces eggs at room temperature
  • 1 1/2 teaspoons vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt

Mix-ins

  • 1 cup sweetened shredded coconut
  • 1 cup macadamia nuts, coarsely chopped
  • 1/2 cup semisweet chocolate chips
  • 1/2 cup white chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F.
  • Spray a 9×13 baking pan with cooking spray or line it with parchment paper.
  • In a medium bowl, whisk together the melted butter and light brown sugar until well combined.
  • Whisk in the eggs one at a time, followed by the vanilla extract.
  • In another bowl, mix the all-purpose flour, baking powder, and salt, then gradually fold this dry mixture into the wet ingredients until just combined.
  • Gently fold in the shredded coconut, chopped macadamia nuts, semisweet chocolate chips, and white chocolate chips.
  • Pour the batter into the prepared pan, using a spatula to spread it evenly.
  • Bake for about 25 minutes, until the top feels firm and a toothpick inserted into the center comes out with moist crumbs.
  • Let the Congo bars cool in the pan on a wire rack, then slice into squares.
