Instructions
Heat olive oil in a large skillet over medium-high heat. Brown the beef on all sides.
Transfer browned beef to the crockpot.
Add sliced carrots, diced potatoes, chopped onion, and minced garlic to the crockpot.
In a bowl, combine beef broth, tomato paste, Worcestershire sauce, thyme, salt, and pepper. Mix well.
Pour the mixture over the beef and vegetables in the crockpot.
Cover and cook on LOW for 6-8 hours or HIGH for 4-5 hours.
Once cooked, serve warm and enjoy your comforting stew!
