  • 1 piece lime, juiced More lime can be added for extra tang.
  • 1 clove garlic, minced

Preparation

  • Begin by preparing all your ingredients. Rinse the cilantro and chili peppers thoroughly under cold water. Chop the cilantro, scallions, and tomatoes. If you prefer less heat, remove the seeds from the chili peppers before chopping.
  • Place the chopped cilantro, scallions, diced tomatoes, and chili peppers into a mixing bowl.
  • Add the lime juice and minced garlic into the bowl.
  • Season with salt according to your taste.
  • Gradually add the water while stirring to combine all ingredients. Adjust the amount of water until you achieve your desired consistency. The aji should be pourable yet thick enough to cling to your food.
  • Taste your mixture and adjust the seasoning if necessary. You may want to add more lime juice for tang or more salt.
  • Once well mixed and seasoned, transfer the aji to a jar or container. Refrigerate for at least 30 minutes to allow the flavors to meld together.

Notes

Store in an airtight container in the refrigerator for up to one week. The flavors improve after sitting for a day or two. For longer storage, freeze it in ice cube trays.
