Ingredients
  

Dry Ingredients

  • 1 cup all-purpose flour Measured correctly for best results.
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup sugar
  • 1/2 cup brown sugar
  • 1/2 cup chocolate chips Use semi-sweet or your preferred type.
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Wet Ingredients

  • 1/2 cup unsalted butter, melted Make sure it's melted but not hot.
  • 1 large egg
  • 1 tablespoon instant coffee granules Use quality coffee for best flavor.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine melted butter, sugar, and brown sugar until smooth and creamy.
  • Add the large egg and instant coffee granules to the butter-sugar mixture and mix well.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, ground cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture and mix until just combined.
  • Gently fold in the chocolate chips.
  • Scoop the dough onto the prepared baking sheet, leaving enough space between each cookie.

Baking

  • Bake the cookies in preheated oven for 10-12 minutes until set but still soft in center.
  • Allow cookies to cool on the baking sheet for a few minutes before transferring to a wire rack.
