Ingredients
  

For the Marinade

  • 1 cup coconut milk
  • 2 medium limes, juiced
  • 1 tablespoon lime zest
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

For the Chicken

  • 4 pieces chicken thighs Bone-in, skin-on recommended for more flavor
  • 2 cups cooked rice Jasmine or basmati rice pairs well
  • to taste fresh cilantro for garnish

Instructions
 

Marinade Preparation

  • In a medium-sized bowl, combine coconut milk, lime juice, lime zest, minced garlic, salt, and black pepper. Stir well to ensure all ingredients are mixed thoroughly.

Marinating Chicken

  • Add chicken thighs to the marinade, ensuring they are coated. Cover the bowl with plastic wrap or place in a resealable bag. Let marinate for at least 30 minutes, preferably longer, for more flavor.

Cooking

  • Preheat grill or skillet over medium heat, lightly oiling the grill grates if using a grill.
  • Cook marinated chicken thighs for 6 to 7 minutes on each side or until the internal temperature reaches 165°F.
  • Remove from heat and let the chicken rest for a few minutes.

Serving

  • Serve over a generous scoop of cooked rice, garnished with fresh cilantro. Optionally, add lime wedges for extra citrus flavor.

Notes

For a spicy twist, add minced jalapeños or cayenne pepper to the marinade. You can also add grilled vegetables alongside the chicken for a complete meal.
