  • 1 large egg Room temperature preferred.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract Use pure vanilla for best flavor.

Optional Mix-ins

  • 1/2 cup chocolate chips, nuts, or dried fruit Add as desired for extra flavor.

Preparation

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large bowl, combine the melted coconut oil and honey (or maple syrup). Whisk them together until smooth.
  • Add the egg and vanilla extract to the mixture. Whisk well until fully integrated.
  • In a separate bowl, mix together the coconut flour, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture. Stir until a dough forms.
  • If you choose to add mix-ins like chocolate chips, nuts, or dried fruit, fold them into the dough until evenly distributed.

Baking

  • Scoop tablespoon-sized amounts of dough and place them on the prepared baking sheet. Flatten them slightly with your fingers.
  • Bake in the preheated oven for 10-12 minutes or until the edges are golden brown.
  • Remove the cookies from the oven and let them cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
