  • 1 cup chocolate chips
  • 1/2 cup butter, softened
  • 3/4 cup brown sugar packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until smooth and creamy.
  • Beat in the egg and vanilla extract until well combined.
  • In a separate bowl, whisk together the flour, baking soda, and salt.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • Fold in the shredded coconut and chocolate chips gently.
  • Drop spoonfuls of cookie dough onto a baking sheet lined with parchment paper, spacing them a few inches apart.
  • Bake for 10-12 minutes until the edges are golden brown and the centers are slightly soft.
  • Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a thicker cookie, chill the dough for 30 minutes before baking. These cookies can be stored in an airtight container for 5-7 days or frozen for up to three months.
