Ingredients
  

For the broth

  • 1 pound chicken thighs, boneless and skinless
  • 1 can coconut milk (14 ounces)
  • 4 cups chicken or vegetable broth
  • 1 cup jasmine rice
  • 1 tablespoon ginger, grated
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 cup vegetables (e.g., carrots, bell peppers, peas) Add in the last 5 minutes of cooking.

For garnish

Instructions
 

Preparation

  • Heat the olive oil in a large pot over medium heat. Add the chopped onion, grated ginger, and minced garlic. Sauté until the onion becomes translucent.
  • Add the chicken thighs to the pot and cook for about 5-7 minutes, turning until they are browned on all sides.
  • Once the chicken is browned, pour in the broth and coconut milk. Stir in the soy sauce and lime juice. Bring the mixture to a light simmer.
  • Add the jasmine rice, ensuring that it is evenly distributed. Season the broth with salt and pepper to taste.

Cooking

  • Cover the pot and allow it to simmer on low heat for about 20 minutes or until the rice is tender and the chicken is cooked through. Stir occasionally to prevent sticking.
  • Add your choice of vegetables in the last 5 minutes of cooking. This allows them to soften but not become mushy.
  • Once everything is cooked, remove the pot from the heat. Let it sit for a few minutes before serving, allowing the flavors to meld.
  • Serve the Coconut Chicken Brothy Rice hot, garnished with fresh cilantro or chopped green onions if desired.
