  • 1 tablespoon ground cumin Adjust according to taste preferences.
  • 1 tablespoon ground turmeric Can be adjusted for a more pronounced flavor.
  • 2 cloves garlic, minced Add more to taste if desired.

Preparation

  • Start by gathering all the ingredients for an efficient cooking experience.
  • Drain and rinse the black beans to reduce sodium content and ensure a cleaner flavor.
  • In a large saucepan, combine the rinsed black beans, canned diced tomatoes (including the liquid), coconut milk, and vegetable broth.
  • Add the chopped green onions, ground ginger, ground cumin, ground turmeric, and minced garlic to the mixture.
  • Place the saucepan over medium heat and bring the mixture to a boil, stirring occasionally.
  • Once boiling, reduce the heat to low and allow the soup to simmer for 30 to 45 minutes, or until desired consistency is reached.
  • Taste the soup and adjust the salt and spices as needed before serving.
  • Remove from heat and let cool slightly before serving.

Serving

  • Ladle the soup into warm bowls and consider adding garnishes like chopped green onions, cilantro, or jalapeños.
