Ingredients
  

For the Coconut Cake:

  • 2 ¾ cups cake flour unbleached
  • 1 tablespoon baking powder
  • ½ teaspoon salt
  • 1 ¾ cups granulated sugar
  • 4 large egg whites
  • 1 large egg
  • 1 cup heavy cream
  • 12 tablespoons unsalted butter softened
  • 2 tablespoons coconut extract
  • 1 teaspoon pure vanilla extract
  • 1 can 15 oz cream of coconut

For the Frosting:

  • 8 oz cream cheese room temperature
  • 1 teaspoon pure vanilla extract
  • 2 teaspoons coconut extract
  • 1 ½ cups shredded sweetened coconut
  • ½ cup granulated sugar
  • 2 cups heavy whipping cream

Instructions
 

Step 1: Prepare Your Baking Pan

  • Preheat the oven to 350°F (175°C) and grease and flour a 9x13-inch pan, or line it with parchment paper. For a layered cake, use two 8-inch round pans.

Step 2: Mix the Dry Ingredients

  • Whisk together the cake flour, sugar, baking powder, and salt in a large bowl.

Step 3: Incorporate Butter and Eggs

  • Add softened butter to the dry ingredients and mix until crumbly. Beat in the egg whites one at a time, followed by the whole egg, until smooth.

Step 4: Combine the Wet Ingredients

  • In another bowl, whisk together heavy cream, vanilla extract, and coconut extract. Add this to the batter and mix until light and fluffy.

Step 5: Bake the Cake

  • Pour the batter into the pan(s) and tap gently to remove air bubbles. Allow the cake to bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Let the cake cool slightly.

Step 6: Add the Cream of Coconut

  • While the cake is still warm, poke holes in the surface with a fork and pour cream of coconut over it. Let it soak and cool completely.

Step 7: Prepare the Frosting

  • Beat cream cheese, sugar, vanilla, and coconut extract in a chilled bowl. Add the heavy whipping cream and continue beating until stiff peaks begin to form.

Step 8: Frost and Decorate

  • Once the cake has cooled, spread the frosting evenly on top and garnish with shredded coconut. Optionally, toast the coconut for extra flavor.
