  • 2 pounds Fresh tomatoes, chopped Opt for ripe, in-season tomatoes for maximum flavor.
  • 4 cups Vegetable or chicken broth
  • 1 cup Heavy cream Can substitute with half-and-half or coconut milk.
  • 1 large Onion, chopped
  • 4 cloves Garlic, minced
  • 1 teaspoon Salt
  • 0.5 teaspoon Pepper
  • 2 tablespoons Olive oil

Optional Garnishes

  • to taste Fresh basil For garnish.
  • to taste Parmesan cheese, grated For serving.

Instructions
 

Preparation

  • Chop the fresh tomatoes, onion, and garlic finely.
  • In the slow cooker, combine the chopped tomatoes, broth, onion, garlic, salt, and pepper.
  • Drizzle with olive oil and stir to combine.

Cooking

  • Set the crockpot to cook on low for 6 to 8 hours or on high for 3 to 4 hours.
  • About 30 minutes before serving, stir in the heavy cream.
  • Blend the soup if desired, using an immersion blender or traditional blender.

Serving

  • Ladle the soup into bowls and garnish with fresh basil and grated Parmesan cheese if desired.
  • Serve with crusty bread or grilled cheese sandwiches.

Notes

This soup freezes well. Leave out the cream until ready to serve. Consider adding roasted vegetables, spices, or different herbs for variations.
