Ingredients
  

For the crust

  • 1 cup all-purpose flour
  • 1/2 cup powdered sugar
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter (softened)

For the filling

  • 1/2 cup plain Greek yogurt
  • 2 large eggs
  • 1 cup granulated sugar
  • Zest of 2 lemons
  • 1/2 cup freshly squeezed lemon juice
  • 1 teaspoon baking powder
  • 1/4 teaspoon vanilla extract

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease an 8×8-inch baking pan or line it with parchment paper for easier removal.
  • In a medium bowl, whisk together the flour, powdered sugar, and salt.
  • In a separate bowl, beat the softened butter until creamy. Add the Greek yogurt, granulated sugar, and vanilla extract. Mix until well combined.
  • Add the eggs one at a time, beating well after each addition. Incorporate lemon zest and lemon juice into the mixture.
  • Gradually stir in the dry ingredients until just combined. Be careful not to over mix.

Baking

  • Pour the batter into the prepared baking pan and smooth out the top with a spatula.
  • Bake for 20-25 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.

Cooling

  • Allow the bars to cool in the pan for at least 30 minutes before cutting them into squares.
  • Dust with powdered sugar if desired.
