Ingredients
  

For the batter

  • 1 cup all-purpose flour
  • 1 scoop protein powder (vanilla or unflavored)
  • 2 large eggs
  • 1.5 cups milk (any type)
  • 1 tablespoon sugar or sweetener of choice
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 0.25 teaspoon salt
  • 1 tablespoon melted coconut oil or butter

For serving

  • to taste cream cheese or Greek yogurt for filling
  • to taste maple syrup for drizzling

Instructions
 

Preparation

  • In a mixing bowl, combine the flour, protein powder, sugar, baking powder, cinnamon, and salt. Whisk them together until evenly mixed.
  • In another bowl, whisk the eggs and add in the milk and melted coconut oil or butter. Mix well to combine.
  • Gradually pour the wet ingredients into the dry ingredients. Stir until just combined; it's okay if a few lumps remain.

Cooking

  • Heat a non-stick skillet over medium heat and lightly grease with oil or butter.
  • Pour about ¼ cup of the batter into the skillet, swirling it in a circular motion to form a thin crepe.
  • Cook for about 1 to 2 minutes, until the edges lift and the bottom is lightly golden. Flip and cook for another 1 to 2 minutes.
  • Repeat the process with the remaining batter, stacking the crepes on a plate as you go.

Serving

  • Spread cream cheese or Greek yogurt on your crepes, roll them up, and drizzle with maple syrup before serving.
