Cookie Dough Ingredients

  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • ½ tsp salt
  • ½ cup unsalted butter, softened Make sure butter is at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 2 tsp vanilla extract

Cinnamon Filling Ingredients

  • ½ cup brown sugar, packed
  • 2 tsp ground cinnamon

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a medium bowl, whisk together flour, baking powder, salt, and cinnamon.
  • In a large bowl, cream the softened butter with granulated and brown sugar until fluffy.
  • Beat in the egg and vanilla extract until well blended.
  • Gradually mix the dry ingredients into the wet mixture until just combined.
  • In a small bowl, mix together brown sugar and cinnamon for the filling.
  • Spread half of the dough onto parchment paper, sprinkle with the cinnamon filling, and roll it tightly into a log.
  • Slice the dough into ½ inch rounds and arrange on a baking sheet.

Baking

  • Bake cookies for 10-12 minutes until golden brown.
  • Let cool on the baking sheet before transferring to a wire rack.
