Ingredients
  

For the Crust

  • 3 cups cinnamon roll dough (store-bought or homemade)

For the Cheesecake Filling

  • 8 oz cream cheese, softened Ensure cream cheese is at room temperature.
  • ½ cup granulated sugar
  • ½ cup brown sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1 cup sour cream
  • ½ cup heavy cream
  • 1 tbsp flour

Preparation

  • Preheat your oven to 350°F (175°C). Prepare a 9-inch springform pan by greasing it lightly.
  • Roll out the cinnamon roll dough into a large rectangle on a lightly floured surface. Cut strips if using dough from a can or break apart into sections if using prepared dough.
  • Arrange the dough to fit the bottom of the prepared springform pan, pressing it down to create an even layer. This will be your crust.
  • In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
  • Gradually add in the granulated sugar and brown sugar, mixing until well combined.
  • Add the eggs one at a time, mixing continuously. Then, mix in the vanilla extract, ground cinnamon, and sour cream until the mixture is creamy and blended.
  • Pour the cheesecake filling over the cinnamon roll crust evenly.
  • In a separate small bowl, whisk together the heavy cream and flour until smooth to create a drizzle. Gently swirl this mixture into the cheesecake filling for added flavor.

Baking

  • Bake in the preheated oven for 40-50 minutes, or until the center is set and the edges have a light golden hue.
  • Once baked, turn off the oven and let the cheesecake cool in the oven with the door slightly ajar for about an hour.
  • Remove the cheesecake from the oven and place it in the refrigerator to chill for at least 4 hours, preferably overnight, before serving.
