Ingredients
  

Main ingredients

  • 1.5 pounds boneless, skinless chicken breasts
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon olive oil
  • 1.5 cups chicken broth preferably reduced sodium
  • 3 tablespoons fresh lime juice
  • 1/2 cup chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1/2–1 teaspoon red pepper flakes adjust to taste
  • 1/3 cup heavy cream
  • 1/4 cup unsalted butter

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C). Pound chicken breasts to an even thickness and season both sides with salt and pepper.

Browning

  • In a large ovenproof skillet, heat olive oil over medium-high heat. Add seasoned chicken and cook for 6 to 7 minutes on one side until golden-brown. Transfer to a plate and cover with foil.

Flavorful Sauce

  • In the same skillet, add chicken broth and lime juice. Stir in red onion, cilantro, and red pepper flakes. Bring to a gentle boil and simmer uncovered for 10 to 12 minutes until reduced to half a cup.

Cream and Butter

  • Add heavy cream and unsalted butter to the skillet. Stir until combined and the butter melts.

Combine and Bake

  • Return the chicken to the skillet, coating with sauce. Transfer skillet to oven and bake for 5 to 10 minutes until internal temperature reaches 165°F (75°C).

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or gently on the stovetop with a splash of chicken broth if needed.
