Churro Cookies

Ingredients
  

For the cookie dough

  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar For the dough.
  • 2 large eggs Room temperature.
  • 1 teaspoon vanilla extract For flavoring.
  • 2.5 cups all-purpose flour Spoon flour into measuring cup for accuracy.
  • 1 teaspoon baking powder For leavening.
  • 1 teaspoon cinnamon Adds flavor to the dough.
  • 0.5 teaspoon salt To enhance flavors.

For rolling

  • 0.25 cup granulated sugar For rolling the cookies.
  • 1 tablespoon cinnamon For rolling the cookies.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • Cream the softened butter and granulated sugar in a large bowl until light and fluffy.
  • Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until fully combined.
  • In another bowl, whisk together the all-purpose flour, baking powder, cinnamon, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until a dough forms. Do not overmix.

Rolling and Baking

  • In a separate small bowl, combine the additional granulated sugar and cinnamon for rolling.
  • Scoop out tablespoon-sized portions of dough and roll them into balls. Roll each dough ball in the cinnamon sugar mixture until fully coated.
  • Place the rolled dough balls on the prepared baking sheet, spacing them about two inches apart.
  • Flatten each cookie slightly with the bottom of a glass to help them spread evenly during baking.
  • Bake for 10-12 minutes or until the edges are lightly golden. The centers may seem soft, but they will firm up as they cool.
  • Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Serve warm right out of the oven, dip in chocolate sauce, or serve alongside vanilla ice cream. Consider chilling the dough for thicker cookies.
