Ingredients
  

Bread Ingredients

  • 1 stick butter (softened)
  • 1/3 cup white sugar
  • 2/3 cup brown sugar
  • 3 eggs
  • 1/4 tsp peppermint extract
  • 1 1/3 cup all-purpose flour
  • 2/3 cup cocoa powder Quality cocoa powder recommended.
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp espresso powder Enhances chocolate flavor; optional.
  • 3/4 cup milk (whole or 2%)
  • 1/2 cup dark chocolate chips
  • Pinch salt

Frosting Ingredients

  • 2 cups powdered sugar
  • 4 tbsp milk (whole or 2%)
  • 1/4 tsp peppermint extract
  • 1 tbsp Greek yogurt

Topping Ingredients

  • 3 tbsp crushed candy canes For decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a mixing bowl, cream the softened butter with the white and brown sugar using an electric mixer.
  • Mix in the baking soda, baking powder, espresso powder, salt, and cocoa powder until well combined.
  • Beat in the eggs one at a time and then add the peppermint extract.
  • Alternate adding the flour and milk to the mixture until fully combined.
  • Gently fold in the dark chocolate chips.
  • Prepare a loaf pan by lining it with parchment paper or greasing it.
  • Pour the batter into the prepared loaf pan and spread evenly.

Baking

  • Bake in the preheated oven for 50-60 minutes, checking doneness with a toothpick.
  • In a separate bowl, prepare the frosting by mixing powdered sugar, milk, peppermint extract, and Greek yogurt until smooth.

Frosting and Serving

  • Once the bread cools, frost the top with the prepared icing and sprinkle with crushed candy canes.
  • Slice and serve your Chocolate Peppermint Bread with a cold glass of milk.
