- ½ cup unsweetened cocoa powder
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ¼ teaspoon salt
- ½ cup vegetable oil
- ¾ cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- ½ cup buttermilk
- ½ cup hot water
For the Peanut Butter Frosting:
- 1 cup creamy peanut butter
- ½ cup unsalted butter softened
- 2 cups confectioners’ sugar
- 1 teaspoon vanilla extract
- 3 tablespoons heavy cream
Make the Chocolate Cupcakes:
Preheat oven to 350°F (175°C) and line a muffin tin.
Whisk dry ingredients in a bowl.
Beat oil, sugar, eggs, and vanilla in another bowl.
Alternate adding dry ingredients and buttermilk, then mix.
Stir in hot water until smooth.
