Ingredients
  

Crust

  • 1.5 cups crushed chocolate cookies Use chocolate cookies for the crust.
  • 0.25 cups unsalted butter, melted Make sure it's unsalted.

Cheesecake Filling

  • 24 ounces cream cheese, softened Ensure cream cheese is at room temperature.
  • 1 cups granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs Add eggs one at a time.
  • 0.5 cups sour cream
  • 0.25 cups heavy cream
  • Zest of 2 oranges Use fresh zest for better flavor.
  • 0.5 cups fresh orange juice Preferably fresh-squeezed.
  • 4 ounces dark chocolate, melted Ensure melted for incorporation.

Toppings

  • 0.5 cups chocolate ganache (optional) For topping before serving.
  • orange slices (optional) For garnish.

Instructions
 

Preparation

  • Preheat your oven to 325°F (160°C).
  • In a mixing bowl, combine the crushed chocolate cookies and melted butter until well mixed. Press this mixture evenly into the bottom of a 9-inch springform pan to form the crust.
  • Bake the crust for about 10 minutes, then let it cool.

Cheesecake Filling

  • In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add the granulated sugar and continue to beat until fluffy.
  • Add the vanilla extract and mix until combined. Add the eggs, one at a time, mixing well after each addition.
  • Incorporate the sour cream, heavy cream, orange zest, and orange juice into the mixture, blending until fully combined and smooth.
  • Gently fold in the melted dark chocolate until a uniform color and flavor are achieved.
  • Pour the cheesecake filling over the cooled crust in the springform pan. Smooth the top with a spatula.

Baking

  • Bake the cheesecake for 55-60 minutes, or until the edges are set but the center jiggles slightly.
  • Allow the cheesecake to cool in the oven with the door cracked for about one hour to prevent cracking.
  • Refrigerate the cheesecake for at least four hours, ideally overnight, to set completely.

Serving

  • If desired, top with chocolate ganache before serving and garnish with orange slices.
  • To serve, remove cheesecake from the springform pan and slice with a warm knife.
