Ingredients
  

Cookie Base

  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 2 ½ cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 cup chocolate chips (dark or semi-sweet)
  • ½ teaspoon peppermint extract
  • ½ cup crushed peppermint candies (optional for topping) Optional for added flavor and decoration.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  • Beat in the eggs one at a time, followed by the vanilla and peppermint extracts, mixing well after each addition.
  • In a separate bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  • Fold in the chocolate chips, ensuring even distribution throughout the dough.

Baking

  • Scoop tablespoon-sized portions of dough onto a baking sheet lined with parchment paper, spacing them about two inches apart.
  • If desired, sprinkle crushed peppermint candies on top of each cookie.
  • Bake for 10 to 12 minutes or until the edges are set, but the centers appear slightly soft.
  • Allow the cookies to cool on the baking sheet for about five minutes before transferring them to a wire rack to cool completely.
