  • 2 sticks butter (softened) Ensure butter is at room temperature.
  • 8 ounces Cabot Sharp White Cheddar Cheese (grated) Use high-quality cheese for best flavor.
  • 1 teaspoon vanilla extract
  • 1 teaspoon chocolate extract
  • 1/2 cup cocoa powder Unsweetened cocoa powder works best.
  • 5 cups powdered sugar Gradually mix in to avoid a sugar cloud.

Preparation

  • Line a 9-inch square pan with foil or plastic wrap for easy removal.
  • Bring the butter and sharp white cheddar cheese to room temperature.
  • In a food processor, combine the softened butter and grated cheese until the mixture is smooth and creamy.
  • Add the vanilla and chocolate extracts, and pulse until well incorporated.
  • Transfer the mixture to a large mixing bowl and mix in the cocoa powder until fully combined.
  • Gradually add the powdered sugar, beating until completely incorporated after each cup.
  • Spread the mixture evenly into the prepared pan.
  • Cover with plastic wrap and refrigerate until firm, about 2 to 4 hours.

Serving

  • Once set, lift the fudge out of the pan and cut it into small squares or bites.
  • Serve on a decorative plate, optionally dusted with cocoa powder or garnished with edible decorations.
