Wet Ingredients

  • 2 large eggs
  • 1 cup brewed coffee (cooled) Espresso can be used for a richer flavor.
  • ½ cup vegetable oil Can substitute with other oils.
  • 1 teaspoon vanilla extract Using high-quality extract enhances flavor.
  • ¾ cup mini chocolate chips Fold into the batter for added texture.

For Dusting (Optional)

  • to taste powdered sugar Dust over the top before serving.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  • In a large mixing bowl, combine the flour, sugar, cocoa powder, baking soda, baking powder, and salt. Stir well to incorporate all dry ingredients.
  • In another bowl, whisk together the eggs, brewed coffee, vegetable oil, and vanilla extract until blended.
  • Gradually add the wet mixture to the dry mixture. Stir until just combined, being careful not to overmix.
  • Fold in the mini chocolate chips to distribute evenly throughout the batter.
  • Pour the batter into the prepared baking pan, smoothing the top with a spatula.

Baking

  • Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the cake to cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.
  • Optional: Once cooled, dust the top with powdered sugar for an elegant presentation.
