Chocolate Chip Protein Cookies

Ingredients
  

Wet Ingredients

  • 1 cup natural nut butter (like almond or cashew butter) Choose a natural variety without added sugars or oils.
  • 1/2 cup coconut sugar or brown sugar
  • 1/4 cup honey or maple syrup
  • 1 large egg Use a flax egg for a vegan version.
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 1 cup rolled oats Oats can be substituted to keep gluten-free.
  • 1 scoop protein powder (flavor of your choice)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt

Add-ins

  • 1/2 cup dark chocolate chips Try different types of chocolate chips for variety.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • In a large mixing bowl, combine the nut butter, coconut sugar, honey (or maple syrup), egg, and vanilla extract. Mix until smooth.
  • In another bowl, mix the rolled oats, protein powder, baking soda, and salt together.
  • Gradually add the dry ingredients to the wet mixture, stirring until everything is well combined.
  • Fold in the dark chocolate chips until evenly distributed throughout the dough.

Baking

  • Scoop tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  • Bake in the preheated oven for 10-12 minutes or until the edges turn golden brown.
  • Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For serving, warm them right out of the oven or try serving with a dollop of nut butter. You can also cut them into smaller pieces for a snack platter. Store in an airtight container at room temperature for up to a week.
