Ingredients
  

Wet Ingredients

  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

Dry Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 tablespoon instant coffee granules

Mix-Ins

  • 1 cup semi-sweet chocolate chips

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  • In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until light and fluffy.
  • Add the egg and vanilla extract, and continue to beat until well combined.
  • In a separate bowl, whisk together the flour, baking soda, salt, and instant coffee granules until evenly mixed.
  • Gradually add the dry ingredients to the wet ingredients, mixing at low speed until combined.
  • Gently fold in the chocolate chips with a spatula.
  • Drop dollops of dough onto the baking sheets, spacing them 2 inches apart.

Baking

  • Bake the cookies for 10-12 minutes, or until the edges are lightly golden.
  • Allow the cookies to cool on the baking sheet for 5 minutes, then transfer them to a wire rack to cool completely.
