Ingredients
  

For the cheesecake filling

  • 16 ounces cream cheese, softened to room temperature Ensure it is completely soft for mixing.
  • 1/2 cup granulated white sugar
  • 1/2 teaspoon vanilla extract
  • 2 large eggs, at room temperature Let them sit out to reach room temperature.
  • 3/4 cup mini chocolate chips, divided Reserve 1/4 cup for topping.

For the crust

  • 1 9-inch graham cracker or chocolate crust You can choose based on your preference.

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, beat the softened cream cheese, sugar, and vanilla extract using an electric mixer on medium speed until well blended and smooth.
  • Add the eggs one at a time, mixing gently until just blended.
  • Fold in 1/2 cup of the mini chocolate chips into the cream cheese mixture.
  • Transfer the mixture into the prepared graham cracker or chocolate crust and smooth the top with a spatula.
  • Sprinkle the remaining 1/4 cup of mini chocolate chips evenly over the top.

Baking

  • Bake in the preheated oven for about 40 minutes, until the edges are set with a slightly jiggly center.
  • After baking, let it cool on the counter for 30 minutes, then refrigerate for at least 3 hours or overnight.

Serving

  • Slice into 8-10 pieces and serve as desired.
  • Consider garnishing with whipped cream or fresh berries for an elevated presentation.
