For the Chicken Marinade

  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 2 large chicken breasts High quality recommended

Burrito Fillings

  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn, fresh or canned
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup lettuce, shredded
  • 1 medium tomato, diced
  • 1 medium avocado, sliced
  • 4 large tortillas
  • 1 cup chipotle ranch dressing

Preparation

  • In a small bowl, blend olive oil, salt, black pepper, garlic powder, and smoked paprika. Rub this mixture all over the chicken breasts. Allow the chicken to marinate for at least 30 minutes.

Grilling the Chicken

  • Preheat your grill to moderate heat.
  • Grill the chicken for about 6-8 minutes on each side, or until fully cooked and the juices run clear. Remove from heat and let it rest for a few minutes before slicing.

Assembling the Burrito

  • Warm the tortillas slightly on the grill or stovetop to make them more pliable.
  • Place a tortilla on a flat surface and start with a scoop of cooked rice, followed by black beans, corn, and sliced grilled chicken.
  • Add shredded cheese, lettuce, diced tomato, and avocado slices. Drizzle chipotle ranch dressing over the top.
  • Fold the sides of the tortilla in, then roll it from the bottom up to secure the ingredients inside.
  • Repeat with the remaining tortillas and fillings.
  • For a crispy texture, grill the wrapped burritos for a couple of minutes on each side.
  • Serve warm and enjoy!
