Ingredients
  

For the Shrimp

  • 1 pound shrimp, deveined and peeled Fresh is preferred.
  • 1/4 cup chipotle marinade Adjust based on spice tolerance.
  • 1 medium lime, juiced Juice adds freshness.

For the Bowl

  • 1 cup rice (white or brown) Adjust cooking time based on rice type.
  • 1 medium avocado, sliced Prepare fresh just before serving.
  • 1 can (15 ounces) black beans, rinsed and drained A great source of fiber.
  • 1 cup corn (fresh, canned, or frozen) Adds sweetness.
  • salsa, to taste Choose store-bought or homemade.

Instructions
 

Marinate the Shrimp

  • In a bowl, combine shrimp with chipotle marinade and lime juice. Mix well to coat evenly.
  • Cover and let marinate in the fridge for at least 30 minutes.

Cook the Rice

  • Cook rice according to package instructions.

Cook the Shrimp

  • Heat a skillet over medium heat and add marinated shrimp.
  • Cook for 3-4 minutes, stirring occasionally, until shrimp turns pink and is cooked through.

Assemble the Bowl

  • Start with a base of rice in each serving bowl.
  • Top with shrimp, avocado slices, black beans, corn, and salsa.

Notes
