Ingredients
  

For the salmon and marinade

  • 4 pieces salmon fillets Use wild-caught salmon for best flavor.
  • 1/4 cup honey
  • 2 tablespoons chipotle peppers in adobo sauce, minced Adjust for spice preference.
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper

For the tacos

  • 8 small corn tortillas Can substitute with flour tortillas or lettuce wraps.

For the pineapple salsa

  • 1 cup fresh pineapple, diced
  • 1/2 cup red onion, finely chopped
  • 1 jalapeño, seeded and diced
  • 1/4 cup fresh cilantro, chopped
  • 2 limes, juiced Juice for the salsa

Instructions
 

Preparation

  • Preheat your grill or grill pan over medium heat.
  • In a mixing bowl, whisk together honey, minced chipotle peppers, olive oil, salt, and pepper until well combined.
  • Coat the salmon fillets in the chipotle honey mixture, ensuring each fillet is evenly covered.

Cooking the salmon

  • Place the salmon on the hot grill. Cook for about 4-5 minutes on each side, or until the salmon is cooked through and flakes easily with a fork. Remove from heat and let it rest.

Making the salsa

  • In a separate bowl, combine diced pineapple, chopped red onion, jalapeño, cilantro, and lime juice. Stir well to combine and adjust seasoning if needed.

Assembling the tacos

  • Warm the corn tortillas on the grill for about 30 seconds on each side until they’re pliable.
  • Place a portion of the grilled salmon on each tortilla, top with pineapple salsa, and serve immediately.

Notes
