Ingredients
  

Eggs and Base

  • 4 large eggs
  • 1 tablespoon olive oil For cooking eggs

Sandwich Fillings

  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 medium tomato, sliced
  • 1 small red onion, thinly sliced
  • ½ cup shredded cheese (cheddar or your favorite)
  • 4 breakfast sandwich rolls Or your choice of bread
  • 2 tablespoons chipotle sauce Adjust based on heat preference
  • Salt and pepper to taste
  • Fresh cilantro leaves for garnish (optional)

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Crack the eggs into the skillet and cook them to your desired doneness, about 2-3 minutes for sunny side up.
  • In a separate pan, heat the black beans until warm, then season them with salt and pepper.
  • Toast the breakfast sandwich rolls until they are golden brown.

Assembly

  • Spread a layer of chipotle sauce on the bottom half of each roll.
  • Layer on black beans, a cooked egg, slices of avocado, tomato, and onion.
  • Top with shredded cheese and garnish with cilantro if desired.
  • Place the top half of the roll on the sandwich to complete.
  • Serve warm for the best experience.
