Preparation

  • In a bowl, mix the soy sauce, garlic, ginger, honey, and chili sauce. Add the sliced chicken, ensuring it's well-coated. Let it marinate for about 15 minutes.

Cooking

  • Heat the sesame oil in a large skillet or wok over medium-high heat. Once hot, add the marinated chicken. Cook for about 5-7 minutes, stirring often, until the chicken is browned and nearly cooked through.
  • Add the sliced bell peppers, broccoli, and carrots to the skillet. Stir everything together and cook for another 3-4 minutes until the vegetables are bright and tender.
  • In a separate bowl, whisk together the peanut butter and chicken broth until smooth. Pour this mixture into the skillet with chicken and vegetables.
  • Stir well to combine everything. Let it cook for an additional 3-5 minutes until the sauce thickens slightly and the chicken is fully cooked.
  • Once done, remove the skillet from heat and sprinkle with chopped green onions. Serve the dish over a bed of cooked rice or noodles.
