  • 1 lb ground beef Can substitute with plant-based meat for a vegetarian option.
  • 1 can kidney beans, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 tbsp chili powder Adjust to taste.
  • 1 tsp cumin
  • 1 tsp paprika
  • to taste Salt and pepper Adjust based on preference.
  • as needed tbsp Olive oil for cooking

Preparation

  • Heat a splash of olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic to the pot and sauté until the onions become translucent, about 3 to 5 minutes.
  • Add the ground beef and cook, breaking it apart, until browned, about 7 to 10 minutes.
  • Sprinkle in chili powder, cumin, paprika, salt, and pepper. Stir well to coat the meat and onion.
  • Add the drained kidney beans, black beans, corn, and diced tomatoes. Stir to combine.
  • Bring the mixture to a gentle simmer, reduce heat, and let it cook for about 30 minutes, stirring occasionally.
  • Check seasoning and adjust salt and pepper as needed.
  • Serve hot.

Notes

Consider adding toppings like shredded cheese, sour cream, or diced green onions. For a thicker chili, cook uncovered for the last 10 minutes. Chili often tastes better the next day, so it’s great for make-ahead meals.
