Ingredients
  

Shrimp and Marinade

  • 1 lb shrimp (peeled and deveined, tail-on) Use large, fresh shrimp for best results.
  • 1/4 cup fresh lime juice
  • 2 tablespoons olive oil
  • 1 tablespoon fresh cilantro leaves (or parsley leaves, chopped finely)
  • 2 tablespoons Thai sweet chili sauce
  • 2 cloves garlic (chopped finely)
  • 1/2 tablespoon honey
  • 1 pinch salt

Instructions
 

Preparation

  • Soak bamboo skewers in cold water for 15-30 minutes to prevent burning on the grill.
  • Rinse shrimp under cold water and pat dry with paper towels.
  • In a medium bowl, whisk together lime juice, olive oil, cilantro (or parsley), sweet chili sauce, garlic, honey, and salt.
  • Add shrimp to the marinade and toss until evenly coated. Cover and marinate for at least 30 minutes to 1 hour.
  • Preheat grill or grilling pan as shrimp marinate.
  • Skewer shrimp onto soaked bamboo skewers (aim for 4-5 shrimp per skewer).

Cooking

  • Grill the skewers for about 2-3 minutes on each side, or until shrimp are pink and slightly charred.

Serving

  • Serve shrimp immediately, garnished with lime wedges and fresh cilantro, or over jasmine rice or alongside a salad.

Notes
