Ingredients
  

For the marinade

  • 2 tablespoons olive oil
  • 3 tablespoons fresh lime juice
  • 1 unit zest of 1 lime
  • 3 cloves garlic, minced
  • 2 teaspoons chili powder
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional for extra heat

For the chicken

  • 4 units boneless, skinless chicken breasts
  • Fresh cilantro, chopped, for garnish
  • Lime wedges, for serving

Instructions
 

Preparation

  • In a small bowl, whisk together the olive oil, fresh lime juice, lime zest, minced garlic, chili powder, cumin, paprika, salt, and black pepper.
  • Place the chicken breasts in a resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is coated thoroughly. Seal the bag or cover the dish, and refrigerate for at least one hour, preferably up to eight hours.

Cooking

  • Preheat your grill to medium-high heat and lightly oil the grill grates.
  • Remove the chicken from the marinade, shaking off any excess. Discard the leftover marinade.
  • Place the chicken on the grill and cook for about 6 to 7 minutes on each side until the internal temperature reaches 165°F (75°C).
  • Remove the chicken from the grill and allow it to rest for a few minutes before serving.
  • Garnish with chopped cilantro and serve with lime wedges.

Notes

For best flavor, aim to marinate the chicken for at least four hours. Use a meat thermometer to ensure it's cooked through, and let the chicken rest before slicing to retain moisture.
