Ingredients
  

Main Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 medium carrot, diced
  • 2 cups vegetable broth Low-sodium recommended
  • 1 cup spinach, frozen or fresh

Spices and Seasoning

  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Olive oil for sautéing Drizzle generously

Instructions
 

Preparation

  • Heat a generous drizzle of olive oil in a large pot over medium heat.
  • Add the chopped onion and sauté until translucent, about 5 minutes.
  • Toss in the minced garlic and diced carrot, cooking together for another 3-4 minutes.

Cooking

  • Add the rinsed chickpeas, vegetable broth, and cumin to the pot.
  • Bring to a boil, then reduce heat and simmer for 10-15 minutes.
  • Stir in the spinach and cook for an additional 5 minutes.
  • Season the soup with salt and pepper to taste.
  • Scoop into bowls and serve warm.

Notes
